Simple Slow Cooker Turkey & Rice Soup




I hope you all had a WONDERFUL Thanksgiving.

I am blessed beyond words and thank God for everything I have.

And I truly LOVE Thanksgiving Day.

It is a day to celebrate with family and friends,

to remember my blessings, big and small, and

to gather around a table and share good food with the ones I love.


Therefore, my favorite meal, without question, is Thanksgiving dinner.

First and foremost, I am a Turkey and YES… a mashed potato girl.

Second, I LOVE, LOVE, LOVE leftovers, too.

And with 4 extra people in my house to feed,

it is nice to have some variations on how to eat the leftovers.

Enter my favorite new kitchen tool… THE SLOW COOKER!

The slow cooker has become my best friend during the past few months.

I have made applesauce, pulled BBQ chicken with Pineapple, soup, chili….

and I am always trying to come up with or looking for new meals to make in it.

This year, I decided to make a DELICIOUS soup in my slow cooker.

Although it was simple and easy to do, it did take a bit of time to prepare.

But, it is well worth it.


Slow cooker Turkey Soup

Quick Rice & Quinoa

Simple Slow Cooker Turkey & Rice Soup


  • Turkey soup stock
  • Pieces of turkey
  • 2 packages of quick rice with quinoa
  • 1 bag of steamable frozen veggies of choice
  • Thyme
  • Himilayan Pink Salt
  • Ground Pepper
  • Garlic
  • Trader Joe's 21 Seasoning Salute


To make the SOUP STOCK

~ Simmer the carcass of the turkey in a BIG pot for 2-3 hours and let cool

~ Separate the bones and meat

~ Use a strainer to catch any remaining pieces in your stock

To make the SOUP

~ Fill the slow cooker with your soup stock

~ Add leftover turkey cut into small pieces

~ Add cooked rice (or pasta)

~ Add cooked veggies

~ Add Thyme, Salt, Pepper, Garlic and 21 Seasoning Salute to taste

~ Put slow cooker on warm overnight and enjoy the next day
